n8n is our default. It's self-hostable, code-friendly, and plays well with custom nodes. We also ship on Make, Zapier (for lighter ops flows), and raw Node or Python services when a workflow tool would fight us. The tool follows the problem; we tell you which one we'd reach for in the scoping call.
